What Is Pork Galbi?
Galbi (갈비) literally means “ribs.” At Korean barbecue restaurants, dwaeji-galbi (돼지갈비) usually refers to pork rib meat—or pork cut in a rib style—marinated before it reaches the grill. The marinade commonly includes soy sauce, sugar or fruit, garlic and other seasonings.
Because the meat is already seasoned, the edges become glossy and lightly caramelized as they cook. The sugar in the marinade can also make the meat brown quickly, so keep turning it and cut it into bite-sized pieces when it is nearly done.
When the sweet marinade hits the charcoal, pork galbi becomes much more than just grilled pork.

Pork Galbi vs. Samgyeopsal
Pork galbi is not the same as samgyeopsal (삼겹살), the thick strips of pork belly many travelers recognize as Korean barbecue. Samgyeopsal is usually grilled without a sweet marinade, so you season each bite with salt, ssamjang or side dishes.
Pork galbi is softer, sweeter and already full of flavor. If you like teriyaki-style sweet-savory flavors, pork galbi is often the more approachable first order. If you prefer rich meat with a simpler taste, try samgyeopsal.
How to Order Pork Galbi in Korean

Many Korean barbecue restaurants require at least two servings of meat for the first order. If the staff speak limited English, showing them 돼지갈비 on your phone is completely fine.
The Best Local Tip: Order Naengmyeon Early
Naengmyeon (냉면) is a Korean cold noodle dish commonly eaten after barbecue. It may come in a chilled broth, called mul-naengmyeon, or with a spicy red sauce, called bibim-naengmyeon.
Most people wait until all the meat is gone before starting the noodles. We do the opposite.
Ask for the naengmyeon early, while there is still pork galbi on the grill.
Take one bite of hot, sweet galbi with the cold, tangy noodles—or put both inside a lettuce wrap. The temperature and flavor contrast makes the meal much more interesting.

At Woori Charcoal Galbi, a small after-meal naengmyeon was included at no extra charge during our visit. Although it is normally served after the barbecue, the staff brought it early when we asked. Complimentary dishes and serving policies can change, so check when you visit.
How Koreans Eat Galbi: Make a Ssam
Ssam (쌈) means “wrap.” It is one of the most enjoyable ways to eat Korean barbecue, and there is no need to make it perfectly.
- Take one lettuce or perilla leaf.
- Add a bite-sized piece of grilled pork galbi.
- Add a small amount of ssamjang, garlic or another side dish.
- Add a few strands of naengmyeon if you ordered it early.
- Fold the leaf around everything and eat it in one bite.

This is where Korean barbecue stops feeling like “just grilled meat.” The crisp leaf, smoky pork, sweet marinade, cool noodles and spicy-salty ssamjang all land in the same bite.

What Is Doenjang Jjigae?
Doenjang jjigae (된장찌개) is a hot Korean stew made with fermented soybean paste, usually with tofu and vegetables. It is often served with Korean barbecue and eaten with rice between bites of rich meat.
For a first-time visitor, the aroma may seem stronger than mild miso soup. The flavor is deeper, saltier and more earthy, which makes it a satisfying counterpoint to sweet pork galbi.

Is This Restaurant Worth a Special Trip?
Woori Charcoal Galbi is a friendly neighborhood restaurant, not a famous Seoul attraction. If your itinerary is centered on Myeongdong, Hongdae or another tourist area, you do not need to cross the city only for this restaurant.
But if you are staying near Sindang or already exploring the neighborhood, it is a comfortable place to try sweet-savory pork galbi in a local setting. We had no wait, the owner was warm and attentive, and the side dishes were generously refilled.
My husband has loved this restaurant for years, and the combination of charcoal-grilled galbi, complimentary stew and early naengmyeon still explains why he keeps returning.
